Half Term Reminder... On Demand Pilates... & my Delicious Tomatoe Panzanella Salad!


Already I am almost half way through my Pilates spring term 2023. I am getting very excited now that the nights seem to be drawing out so much more, and that everything seems to be coming to life in my recently landscaped new garden. I am especially looking forward to the crocus bulbs (105 to be precise!) that I planted showing themselves in a few weeks or so.

Half term break from face-to-face Pilates classes reminder

Next week commencing 13th February through to 19th February 2023 is our half term break from face-to-face Pilates classes at all venues. My On Demand Pilates Video Library will of course remain open over the half term for all class members, so that there is plenty of opportunity to do some Pilates practice during the week. In fact all of my Pilates class bookings come with the following benefits at no extra charge for maximum flexibility:

 

  • Your choice of face-to-face Pilates classes - Venues in Leicestershire and Northamptonshire. Please see my current Pilates class timetable for details.
  • Live online class via zoom - You can join me on Wednesday evening instead of, or as well as your face-to-face class.
  • Unlimited access to an On Demand video library - I record, edit and upload my weekly class to a video platform which you can access via a link and password at any time, whether that is instead of, or as well as, coming to my face-to-face classes.
  • Catch up classes - Never forfeit your class if you happen to miss one. You can join me live online via zoom, catch up with your class via the On Demand Pilates video library, or just get in touch to come along to another of my face-to-face classes in the timetable instead.



On Demand Pilates Video Library Password and Link

The password to my On Demand Pilates video library changes every term, or sooner if required. Currently my On Demand Pilates Video Library holds all of my edited and presented Pilates class recordings from my live online Pilates Zoom sessions going back to September 2022, listed in weekly date order. There is no extra charge for access, plenty of choice, and new class members are sent all of the details upon successful sign up. 


My Latest Favourite Salad Recipe!

I often include a favourite recipe in my newsletters to my class members. It was something that started during lockdown when we all met up for Pilates classes on Zoom, and very often shared culinary expertise, and our latest favourite recipes whilst having a chat before we started!

This one is my latest favourite salad. I absolutely love tomatoes and this one for Panzanella has quickly become a frequent entry on the Fletcher household menu. It so reminds me of the summer months, and is delicious as a lovely light lunch or supper. You will find many versions of this recipe online, but this one is so easy, fresh, and zingy, that I just had to share it. If you grow your own tomatoes in the summer months, it will taste even more amazing I am certain.


Delicious Tomato Panzanella Salad

Serves 4 as a side accompaniment...or 2 as the main event!

 

 

 

4 thick slices of slightly stale bread (sourdough/ciabatta is good) cut into bite sized chunks
8 tbsp olive oil
2 large garlic cloves grated/finely chopped
3 tbsp red wine vinegar
Salt and pepper
2 large juicy tomatoes chopped
300g of small tomatoes (different colours looks gorgeous)
1 x 280g jar of ready roasted chargrilled mixed peppers, drained and sliced
1 small red onion finely sliced
A very good handful of olives, halved
1 heaped tbsp unsalted capers
A handful of fresh basil leaves torn

Preheat oven to 180 degrees fan.

To make croutons, mix the bread chunks with 2 tbsp of the olive oil and half the chopped garlic, and toss well to coat. Spread on a baking sheet and bake for 10/15 minutes until golden. 

In a jar, mix the remaining 6 tbsp of olive oil with the remaining garlic and the red wine vinegar. Season with salt and pepper and shake well.

Add the tomatoes, olives, capers, peppers, red onion and croutons to a large salad bowl. Pour over the dressing and toss well. Sprinkle with the basil leaves and serve straight away. Fabulous!
