Holidays, Pilates On Demand Video Library Summer Special.........and Courgettes!

Wow! It's the end of term this weekend!


Goodness me... yes... this Saturday 10th July sees the end of our 2021 summer term and another year of my hugely enjoyable Pilates life.

It has been lovely to welcome some new class members recently, both live and on zoom and I will very much look forward to seeing everyone again in September. I will be sure to share my autumn zoom/live timetable as soon as it is finalised, and as I am planning on running some ad-hoc 'Happy Hour' summer pilates classes (whether that is via zoom or live), I will be posting about those too. Watch this space .

In the meantime, I will be back and forth to the south coast, bobbing about with husband Graham on our boat when we can, and partaking in a little Pilates on the deck or the nearest jetty. We are ever hopeful for some nice weather and the chance to anchor up beside a nice beach, so fingers crossed!

I was chatting about this recipe the other week during one of our Zoom chats before class and promised that I would share it. I spotted it in The Sunday Times once and is lovely and fresh with a delicious dressing.


And finally.....if you love courgettes you will love this; Griddled Courgettes, tahini dressing and roasted chickpeas!





  • 6 medium sized courgettes sliced into 4 or 5 lengthways
  • 1 tbsp olive oil 
  • Salt & Pepper
  • Juice of half a lemon
  • 1.5 tsp sumac (or more to taste)

Chick Peas

  • 1 x 400g can of chickpeas, drained, rinsed and patted as dry as possible
  • 1 tsp cumin seeds, toasted and lightly crushed
  • 1 tsp coriander seeds, toasted and lightly crushed
  • 2tbsp olive oil
  • 1/2 tsp salt, plus more to season

Dressing: (Any that is leftover is really nice with grilled/cooked meats, salad, potatoes or other grilled veg)

  • Juice of half a lemon
  • 50g tahini
  • 2 small cloves of garlic, crushed
  • 100ml water


  • 1 small bunch of mint, leaves picked and roughly chopped
  • ½ tsp chilli flakes, or more to taste

Preheat the oven to 220°C/200°C fan/gas mark 7.


Season the courgettes well with salt and pepper and brush with oil. Griddle on a barbecue, grill, or cook in the oven on a baking tray until slightly charred and tender. Remove from the oven, arrange on a serving platter and sprinkle with the lemon juice and sumac.


Mix the chickpeas with the salt, cumin seeds, coriander seeds and olive oil. Roast in the over on a baking tray for 10 - 15 minutes, giving the tray a good shake to rotate the chickpeas halfway through cooking until some of the chickpeas have begun to brown. Remove from the oven and season with another good dusting of salt and scatter over the courgettes.
