Deliciousness demands sharing - a wonderful seeded soda bread recipe
It’s been a while since I included a recipe to tantalise the tastebuds, so here is one that husband Graham and I have discovered recently. It is a fabulous, seeded soda bread that lasts all week and tastes like it is gloriously 'good for you:
Ingredients
- 70g soft pitted prunes
- 150g wholemeal flour
- 85g ground flaxseed (I buy whole flaxseeds and grind up in my processor)
- 1½ tsp bicarbonate of soda
- 1½ tsp sea salt
- 230g mix of seeds and nuts
- 35g jumbo oats
- 300ml Kefir
Method
- Preheat the oven to 180°C/160°C fan/ and line a 2lb loaf tin with baking parchment.
- Soak the prunes in 80ml boiling water.
- In a bowl, mix the flour, ground flaxseed, bicarbonate of soda, sea salt, seeds and nuts, and all but 1 tablespoon of the oats.
- Add the kefir to the prunes and their soaking liquid and blitz with a hand-blender until smooth. Pour this into the bowl of dry ingredients, mixing very gently until you have a wet dough.
- Transfer the mixture to the prepared loaf tin or tray, sprinkle with the reserved oats, and flatten it down slightly. Score a ½cm-deep line down the middle of the loaf.
- Bake for 45 minutes, turning the loaf upside down in the tin for the last 5 minutes to get a nice even crust. Transfer to a wire rack to cool.

Looking forward to starting classes again next week, feeling all sprightly, stretched and possibly having snacked on the odd slice of something seedy and rather sensational!
Warmest wishes always
